  • GI left empty for crystalline maple sugar. Pure Canadian maple syrup is GI 54 (SUGiRS / Atkinson). Maple-flavored corn-syrup toppings assay higher (~68) and are not maple sugar. A sucrose-like “≈65” for dehydrated maple sugar is an estimate, not a published powder assay.
